Simple Tomato Sauce Pasta
Basic onion, garlic, tomato paste, and crushed tomato sauce for a box of pasta.

Heat the olive oil in a large pot over medium heat and cook the onion with a pinch of salt until soft, 6 to 10 minutes.

Add the garlic and cook for 30 to 60 seconds.

Stir in the tomato paste and cook for 1 to 2 minutes until it darkens slightly.

Add the crushed tomatoes and about 1/2 cup water and bring to a gentle simmer.

Lower the heat and cook for 15 to 30 minutes, stirring occasionally.

Cook the pasta in salted water and reserve 1 cup of pasta water.

Drain the pasta, add it to the sauce, and toss with a little pasta water until the sauce clings well.

Season with black pepper and adjust the sauce with sugar or butter if needed.
