Sheet-Pan Gochujang Chicken

    Preheat the oven to 425°F.

    Whisk together the gochujang, soy sauce, ginger, and oil.

    Toss the sweet potatoes, carrots, and leeks in most of the glaze and spread them on a sheet pan.

    Season the drumsticks with salt and pepper, coat them in the remaining glaze, and nestle them among the vegetables.

    Roast for 35 to 45 minutes, turning the pan halfway through, until the chicken is cooked and the vegetables are tender.
