Salmon with Pesto and Green Beans

Whole salmon baked with green beans, onion, and a fresh herb pesto.

    3 cups fresh green beans

    1 red onion, thinly sliced

    olive oil

    3 tablespoons extra-virgin olive oil

    chive

    Handful of fresh chives

  • 1 handful

    basil

    Handful of fresh basil leaves

    parsley

    Handful of fresh parsley

  • 1/4 cup

    pine nut

    1/4 cup pine nuts

  • lemon

    Juice of 1 lemon

  • 1 teaspoon

    salt

    1 teaspoon kosher salt

  • 1/2 teaspoon

    honey

    1/2 teaspoon honey

    Blend the chives, basil, parsley, pine nuts, lemon juice, olive oil, kosher salt, and honey into a smooth pesto.

    Place the salmon in the middle of a parchment-lined baking pan and arrange the green beans and onion around it.

    Spread three-quarters of the pesto over the fish.

    Sprinkle flaky salt and drizzle olive oil over the beans and onion.

    Bake at 420°F for 20 minutes.

    Switch the oven to convection broil at 450°F and broil for 7 to 8 minutes.
