Place the cod in the center of a parchment-lined baking pan.

Arrange the vegetables and basil around the fish and add the lemongrass on top.

Mix the salt, black pepper, paprika, coriander, cumin, and sumac.

Sprinkle the spice mix over the fish and vegetables, then drizzle with olive oil, date syrup, and lemon juice.
