Honey-Herb Roasted Acorn and Spaghetti Squash

    Preheat the oven to 400°F and line two baking sheets.

    Brush the spaghetti squash halves with olive oil, salt, and pepper and place them cut side down on one sheet.

    Slice the acorn squash into wedges and toss them with honey, olive oil, thyme, salt, and pepper on the second sheet.

    Roast both trays for 25 to 35 minutes, swapping positions halfway through.

    Scrape the spaghetti squash into strands and season it with a little more olive oil, salt, and pepper.
