Gingery Beef and Greens Stir-Fry

Toss the beef with soy sauce and cornstarch and let it rest for 10 minutes.

Whisk together the sauce ingredients.

Sear the beef in a very hot skillet in batches and remove it.

Cook the vegetables in stages: leek first, then broccoli and stems, then carrots and peppers, then garlic and ginger, then bok choy and kale.
