Whole beets roasted in foil until tender, then peeled and sliced.

    3 beets, scrubbed clean

  • 1 to 2 tablespoons

    olive oil

    1 to 2 tablespoons olive oil

Steps

    Preheat the oven to 400°F.

    Pile the whole beets on a large sheet of foil and drizzle with olive oil, salt, pepper, and optional herbs.

    Seal the foil into a packet and roast for 60 to 75 minutes until tender.

    Cool slightly, rub off the skins, and slice before serving.
