Chicken and Quinoa
Drumsticks simmered with onion and carrots, then finished with quinoa.

Steps

Heat a large pot with a little oil and sauté the onion until golden.

Add the chicken drumsticks and sear on both sides until lightly browned.

Stir in the carrots and cook for a few minutes.

Add the water, salt, pepper, and garlic powder.

Bring to a boil, reduce the heat, and simmer for 45 minutes.

Remove the chicken and set it aside.

Add the rinsed quinoa to the pot, stir, and adjust seasoning if needed.

Bring back to a boil, reduce the heat, cover, and cook for 15 minutes.

Turn off the heat and let the quinoa rest, covered, for 5 minutes.

Return the chicken to the pot, cover, and let it warm through before serving.
